Summer-Time Beef Stew

1 c of chopped Celery

1 c of chopped Onions

1 pd of New York Strip cubed

1 c Frozen Peas

1 c Sweet Corn

4 c Beef Stock

1 c Water

2 c Bow-tie Pasta

1 tbsp Red Pepper Flakes ( for spice optional.)

1 tbsp Chipotle Chile powder

Salt & Pepper to taste

In pot heat olive oil to brown meat. Take cubed New York strip and roll in flour. Brown meat, then remove. Combine all vegetables and saute until fork tender, then add beef stock, water, pasta, and seasoning. Bring to low simmer add meat. Leave on low heat for 8-10 minutes. Turn fire off. Let set for 5 minutes. Garnish with sour cream. Enjoy!
